I was feeling that yesterday while thinking of what to make for dinner, and after recently reading a recipe for shrimp scampi and perusing through the farmer's market, this is what made it to our outdoor dinner table: summer shrimp pasta with fresh veggies in a butter olive oil sauce.
It was simple but full of flavor and color & the basil was perfect in it. We loved it!!
1) saute as much shrimp as you'd like to use in a large skillet with about 1/3c melted butter and 1-2 tsp garlic. Drizzle in a nice amount of olive oil. Squeeze in a lemon's worth of juice. Once cooked, set aside and keep the sauce with it.
2) saute the cut green & yellow zucchini {I used 3 small ones} in some olive oil
3) cook the angel hair pasta italiano style: lots of water with a good amount of sea salt to bring out the flavor until the pasta is al dente. drain but do not rinse.
4) toss the pasta, zucchini, halved cherry tomatoes, freshly cut basil, and the shrimp in it's butter olive sauce until all the flavors mix. squeeze some lemon juice on top.
{It made plenty ~ enough for din plus a good amount for Cam to take for lunch.
I fully admit that I take pride in knowing he's eating well at work & staying as far away as humanly possible from vending machines & fast food!}
