My good friend Meredith made this salad for me the other night for dinner at her house and has convinced me that kale no longer belongs hidden in lasagnes and soups but eaten outright and often. This salad is SO yummy. If you don't already love this dense green, you might after having this! A huge plus is that kale is so very, very good for you.
This delicious salad is also super easy to make. Thanks to Mere for thinking it up!
Drizzle fresh kale in olive oil and sea salt. Roast in the oven for about 5 minutes or so on 400 degrees. Then simply crumble goat cheese, sliced figs and avo on top. Sprinkle a little more salt or add olive oil if needed. Perfect lunch or light dinner!

ReplyDeleteBut can we just talk about the sunflowers for a sec.....they are gorgeous and they make me miserable because yesterday it snowed in Pretoria!!!! That NEVER happens!!! And today it is icy cold....the sunflowers are depressingly beautiful...
