Over the Southern Alps to Franz Josef, New Zealand

I hope you all had a wonderful Christmas! 
Before I share new recipes from this Christmas week, I wanted to post some more photos from gorgeous New Zealand…

We can’t even count the times that we pulled over, or simply stood still and stared out in awe. Whether it was vast expanse of turquoise water with snow-capped mountains or cascading waterfalls all around us, or sitting in a natural hot spring in a rainforest next to a glacier, there was nothing we could even say, except an occasional, “wow, can you BELIEVE this!?” I can’t describe New Zealand properly. It’s too wildly beautiful for words.

On the way to Franz Josef was also when I had my low point. Cams looking over my shoulder laughing, calling it my “meltdown.”  Let’s just say it had to do with the tiny “shower room” in our campervan that did not have a pleasant aroma… me being in it covered head to toe in soap suds, shivering, the water running out… and my husband pouring a water bottle over my head trying so hard not to die laughing.  No, he was of course laughing, rubbing his hand in my soapy hair, holding back jokes. That’s about when I made him promise me through clattering teeth that we would never rent a campervan ever again.

    We rented the smallest campervan from Britz in Australia (they have an office in New Zealand too.) It was too small! There was no shower and our trip was three weeks. I had several meltdowns over the lack of a good map or gps. We had an awkward night of no talking once. There was nowhere to go. He was always right there! I'd do the campervan again but it has to be a lot bigger next time. :o) Esther Norine Designs

    hahahaha oh amanda! that is hilarious!!!! I can just picture Cam CRACKING UP and trying to make it okay – as you are losing it and vowing off all future campervan experiences. Those deer don't even look REAL in the first picture!

    New Zealand!!!! That is on our top 5 list of places we would kill to visit :-). The whole country is just like a movie set, no??? So glad you guys had a wonderful awe-inspiring time Amanda! Sorry about the meltdown…totally felt ya on that one. Ugh. Happy Christmas to you!!!

    Ha, my NZ meltdown happened at mt cook where I got bored after a few days (the only time that happened in nz) and couldn't stand the place we were staying (not ideal showering conditions either!). These photos are so beautiful though!
