Cilantro Grilled Chicken with Lemon Yogurt Dressing

We have officially entered summertime on this little island. In Okinawa, that means serious heat and humidity, but also lots of beach time, dips in the ocean and grilling on our back patio. We even hung out in the adirondack chairs and roasted s'mores with our good friends Saturday night {someone had a craving!!} Most people I know love the Fall and Christmas seasons best, but for me, even being pregnant and getting bigger every day, summer is mine.

I was inspired to make us a new summertime dish that we could create variations with all season long. This chicken marinade has a little bit of kick to it, but the greek yogurt dressing cools it down perfectly. We've made this three weekends in a row!, and Cam grills enough chicken so we can eat it differently each time with leftovers: as is dipped in the dressing; in a huge green salad; and cut up into a delicious pasta salad.


Cilantro Grilled Chicken & Salad with Lemon Yogurt Dressing

For the Chicken Marinade:
{serves 4}

2 lbs chicken tenderloins {about 15 pieces}
1 C honey
4 TBS EVOO
4 TBS soy sauce
3 lemons worth of juice + zest from each
6 cloves garlic, minced
2 tsp. sea salt and pepper, each, + more for taste
2 chili peppers, diced with seeds
1 generously large handful of fresh cilantro leaves

Rinse the chicken and pat dry. Set aside. Combine all of the ingredients for the marinade in a medium-sized bowl. Optional: remove about 1/2 C to pour over the top of the chicken once cooked. Toss the chicken in the marinade bowl and either cover and refrigerate, or pour the contents into a freezer bag to marinate. Keep in the refrigerator for atleast an hour, though overnight is best. Cook directly on a heated grill for 3-5 minutes on each side until cooked through and grill marks form.


For the Lemon Yogurt Dressing:
{serves 2}

1 C plain greek yogurt
3 lemons + 2 TBS lemon zest
2 TBS garlic, minced
3 TBS EVOO
1 tsp sea salt
1 teaspoon red wine vinegar
1 small handful of fresh cilantro leaves

Combine all of the ingredients, adding more salt or lemon as it needs. Garnish with fresh cilantro.

For each Green Salad:
farmer's greens
2 oz. crumbled gorgonzola
1 C cherry tomatoes, halved
1/4 C walnuts
1/2 avocado, sliced

Toss the chicken and dressing with the above ingredients. Enjoy!

  13. Definitely trying this. We need all the help we can get as the hubby can't tolerate a lot of gluten anymore, so we have had to make a lot of meat & veggie/ salad dishes. Thanks for posting! And, I love the header also. I didn't know Shannon very well, but we went to college together :)

  16. I made this chicken TWICE this past week and we can't get enough. I didn't have the ingredients to make the dressing but the chicken alone was phenomenal! I think this will be one of my go-to chicken recipes now. :)
