Formaggio Frutta Insalata Lemon Life Summer Tomatoes

Gorgonzola, Peach, Arugula Salad with Summer Fruit Vinaigrette {with or without steak!}

Cam and I were reminded {while devouring!} this dinner that gorgonzola and peaches compliment each other perfectly. Also, that the peppery taste of arugula is so yummy with grilled steak. And to top it all off? A light, fresh, fruity vinaigrette that takes no more than a few minutes to make and is phenomenal in this salad and for dipping crusty bread into. 

It’s overall a fantastic meal for summertime.
Grilled steak on top is optional, of course… but highly, highly recommended. 
That would be Cameron’s son inside my belly yelling that out!

The vinaigrette is easily made from peaches, strawberries, lemon, EVOO, red wine vinegar and a pinch of sea salt. It’s delicious with chicken, fish, and even adds great flavor on sammies, too.

Gorgonzola, Peach, Arugula Salad with Summer Fruit Vinaigrette {with or without steak}
2-4 C arugula
1-2 peaches, sliced
1 C cherry tomatoes, halved
1 large handful of gorgonzola, crumbled
walnuts for garnish
grilled steak {optional, though my baby boy says you should}

Vinaigrette:
1/2 C frozen peaches
1/2 C frozen strawberries
1/2 lemon, squeezed
1/4 C red wine vinegar
1 C EVOO
pinch of sea salt

Add all of the ingredients to a blender and pulse until smooth. Refrigerate until ready to serve. Toss with the salad and enjoy! You can also dip bread in the vinaigrette, use it for a chicken or fish marinade or a dressing on sandwiches.

    This sounds like Heaven, and something very similar to what I ate for dinner tonight. I had romaine lettuce with grilled chicken, blue cheese, dried cranberries, cucumbers and balsamic vinegerette dressing. Down right divine! ๐Ÿ™‚

    I made this recipe {with steak ๐Ÿ˜‰ } for a group of my friends last night and everyone LOVED it! What a wonderful flavor combination and the opportunity to use peaches while they're in season is always wonderful. The vinaigrette was out of this world!! Thank you for sharing this yummy dish!
