Fig, Bacon & Goat Cheese Pizza

I am so happy to have our kitchen totally unpacked and to be cooking again. This pizza may be a little too rich for some with the creamy brie, gorgonzola or goat cheese and bacon (Cam says, whaaat? How could this be?) If that is the case, mozzarella is a wonderful substitution for the brie. We've eaten this incredible pizza two nights in a row with spinach and strawberry salad and my favorite balsamic vinaigrette.


Fig, Bacon & Goat Cheese Pizza

Handful of fresh figs, rinsed and halved
4 strips of bacon, uncooked
6oz fresh mozzarella or creamy brie, sliced
3oz goat cheese or gongonzola, crumbled
1 pizza dough (recipe here) or pre-made
EVOO
1 tablespoon minced garlic
1 handful fresh basil leaves

If you're in a time crunch and have a Trader Joe's nearby, they have yummy ready-made pizza dough, or you can make your own. Preheat the oven to 450 degrees F. Let the dough sit on a lightly floured surface for 10-20 minutes. Roll out the dough to your desired thickness and move it to an olive oiled pizza stone or baking sheet. Drizzle EVOO over the entirety of the dough. Using your hand or the back of a spoon, spread the EVOO and garlic evenly. Place the brie or mozzarella slices ontop, then the goat cheese and/or gorgonzola, the slices of bacon and then the figs. Bake for 10-20 minutes, or until the crust is golden brown and the cheese is bubbly. Top with a handful of fresh basil leaves. It's wonderful served with a spinach salad and wine.
