The Best End of Summer Recipes!

It still feels like summertime in Croatia (sunshine and 80 degrees!) but since the season is officially coming to it's end, I wanted to share some of my favorite recipes to make this time of year before the beautiful array of produce changes and is gone until next summer.


A family favorite! Fig, Bacon & Goat Cheese Pizza. Like the next recipe, sweet, fresh figs are needed to make this dish shine. If you live near a Trader Joe's, they make the perfect pizza dough for this!


We picked figs from the most enormous fig trees we've ever seen while in Istria this week, and made this for an appetizer. I could eat it every day! Warm Fig and Goat Cheese Crostini Drizzled in Honey & Extra Virgin Olive Oil.



Even our children love this! Stuffed Eggplant with Zucchini, Garlic, Gorgonzola & Sausage.


Cam and I like to share this with vanilla ice cream on top. Summer Stone Fruit and Blackberry Cobbler.


This one is so easy and packed with flavor! Sweet Garlic & Herb Grilled Chicken & Carrots.

  1. We have made the sweet garlic and herb chicken a ton since you first posted that recipe. I had never grilled carrots before and they are amazing! That marinade is so so good!
