This weekend, something amazing happened.  Mere stopped by saying she had a "surprise" for us. For the past few months, she'd been collecting packages for us through her mail box. She had thee sweetest video from Sarah, Em, Ahn, Maddie, Nicole Stud, Megs, Michaela, Candice & Nicole, that Sarah put together... and a huge bag of packages from them along with Anna, Lauren, Megan, and Sophs, of classic children's books !! Oh, this simple, irresistible panini. Made with some of the most complimentary ingredients: fresh spinach, avocado, red onion, met by crisp granny smith apples, oozing sharp cheddar cheese, salty prosciutto and drizzled in a raspberry vinaigrette.  For those looking for another simple summertime meal, this is truly hard to beat, especially paired with fresh fruit.
