Caprese Life Sandwich Spring

Caprese Sourdough Sammie with Balsamic Garlic Dip

I devoured this for lunch today and thought it only fair to share. Twas’ amazing! Fresh cherry tomatoes and basil, gooey mozz, crunchy sourdough bread…

 …but what really makes this sandwich is the balsamic garlic dip. You can pour it right in the sandwich, or on top, or use it for a dip.

{I also use it for chicken marinade, salad dressing, and sammies. It will make your taste buds sing!}

Caprese Sourdough Sammie with Balsamic Garlic Dip
{per serving}

2 slices of sourdough bread {or your favorite}
1 C cherry tomatoes, halved
1 small bunch of fresh basil
3 oz mozzarella, sliced
3 T EVOO plus more for brushing the bread
4 T balsamic vinegar
1 good squeeze of honey
1-2 garlic cloves, minced

If using a panini press, preheat on medium. {You can also use a toaster oven, regular oven or stovetop} Brush both sides of the bread with EVOO. Place the mozz slices, then the tomatoes inbetween the bread and press in the panini maker {or your preferred method of cooking} for about 2-4 minutes or until the cheese oozes. {Add the basil to the sammie after it’s toasted so they don’t wilt right away}. While it’s cooking, combine the EVOO, balsamic, honey and garlic in a mason jar. Shake until thoroughly combined. Taste to make sure it’s to your liking ~ squeeze in more honey if it’s too tart. I usually have a large mason jar of this dressing in our pantry. It holds well and gets thicker and more delicious as the days go by! Happiest weekend!!
