The Best Chopped Salad

I thought our babe was on his way last night…  Cam and I were cozied up watching a movie before bed and I started having the strongest cramps and contractions I’ve had yet. I asked him if he thought this could be it? He laughed and said, no, definitely not yet. He must have a secret daddy-son communication because he was right. 
I suppose it was simply more intense Braxton Hicks, getting my body ready for birth.

This delicious salad! Thanks to Joanna, I had the wonderful opportunity to share it last week on her blog in her Best Of Series, but I also want to share it here in case anyone is looking for a yummy & easy Labor Day recipe. You can make it just for yourself, for two, or for as many friends or family as you’d like. The options are limitless and can be customized to any palette.

The Best Chopped Salad with Garlic Lemon Vinaigrette
{serves 4+}

1 large head of crunchy romaine lettuce, rinsed and chopped
1 cup strawberries, chopped
2 avocados, chopped
6-8 oz. Gorgonzola cheese, crumbled
1 cup walnuts
1 cup cooked chicken, chopped
1 cup cooked bacon, chopped
1 cup apples, chopped
1 cup red onion, chopped
1 cup grapes, halved
1 cup oranges, chopped

For the dressing:
2 ripe lemons
4 cloves of garlic, crushed
1/2 cup extra-virgin olive oil
1/8 cup red wine vinegar
1/4 cup honey
1 tsp. Dijon mustard
Fine sea salt, to taste

Arrange each of the chopped salad ingredients in separate bowls. For the
dressing, squeeze the lemons directly into a mixing bowl to allow any
pulp to come out. Whisk with the garlic, olive oil, red wine vinegar,
honey, mustard and a pinch of salt. Taste, and add more salt as needed.
If the dressing is too tangy for your taste, add more honey. Toss the
salads when ready to eat. Enjoy!

NOTE: If serving more than four people, double this recipe.

    Wonderful summer salad… And filling as well. Today it's going to be very hot here in Oporto, so I might for something close to this for dinner ๐Ÿ™‚

    Looks deliciously yummo! Definitely trying. Oh my goodness, aren't those false alarms exciting! I loved the waiting, like a surprise was coming at any minute!! P.S. romaine lettuce is a natural form of pitocin….. if you ever get anxious!! J was basically force feeding me "labor salads" the last couple weeks of both pregnancies!!(:

      Really!!!!? I had no idea! Bianca, you just decided our dinner for tonight.. and the next night and the next night…. (; Yes, that false alarm really was exciting. I was actually disappointed when the contractions stopped. What a change from when I was scared out of my mind a few weeks ago!!
