Grilled Citrus Salmon Tacos with Lemon Yogurt Drizzle and Black Bean Tomato Salsa

Garlic grown and gifted from our neighbor!

Last night Kristen and I celebrated Mere over dinner with local salmon caught that morning, grilled in a huge open flame {it literally took all took all three of us to get it off without getting scorched!} on our back patio, to the sound of waves as the tide rolled in. It was a beautiful night.  Happy birthday, Merebear!! You make Okinawan life so much more fun, vibrant and meaningful!

I wish I could take you to our fish market so you could see how beautiful the colors of freshly caught, wild fish are. And the taste! It’s one of the many, many things we’re so grateful for, living on this island.

If you’ve never experienced fish tacos before, you’re in for a treat. And with the omega-3, minerals, fiber, protein, and anti-oxidents from the salmon, black bean tomato salsa and crunchy cabbage, you’re also in for a highly nutritious meal, with perfect flavors for the start of summer.

Grilled Citrus Salmon Tacos with Lemon Yogurt Drizzle and Black Bean Tomato Salsa

2-3 filets of fresh salmon 
2 cloves of garlic, minced
1 lemon
1 lime
1 orange, thinly sliced
2 T EVOO
generous pinch of fine sea salt
8 small corn tortillas
4 oz. goat cheese
fresh cilantro for garnish

Rub each filet in garlic and sea salt and drizzle the EVOO evenly over each. Cover each piece with the orange slices, and squeeze 1/2 of the lemon and 1/2 of the lime on top.

Place the corn tortillas directly on the grill and turn as they begin to get grill marks. Move to the edge of the grill off the flame to stay warm. Grill the salmon for about 5 minutes, or until just cooked and pieces flake off. Immediately remove from heat, place on a serving platter and squeeze the remaining lemon and lime juice over the top.

Serve the tacos with the tangy diced red cabbage, black bean tomato salsa, lemon yogurt drizzle, goat cheese crumbles and fresh cilantro for garnish.

Lemon Yogurt Drizzle
1 C plain greek yogurt
1 T minced garlic
generous pinch of fine sea salt
1/2 lemon, squeezed for the juice
1 T EVOO

Stir all of the ingredients. Taste; add more salt or EVOO if needed.

Black Bean Tomato Salsa
1 can black beans, rinsed
1 C halved cherry tomatoes
1 generous handful of fresh cilantro leaves {stems removed}
1/2 red onion, diced
1 T EVOO
generous pinch of fine sea salt
1 T garlic

Combine all of the ingredients. Drizzle more EVOO if needed!

Tangy Diced Red Cabbage
2 C diced red cabbage
2 T apple cider vinegar
1/2 lemon, squeezed for juice
1/2 T fine sea salt
1 generous squeeze of honey

Toss all of the ingredients together; taste. Add more salt or honey as it needs.

    These look amazingly delicious! This truly makes me wish my husband had stayed in the Marine Corps so we could have had this amazing experience! While I'm thankful that we are now settled in one place, I still have such love for those still (and have!) served our country! Thanks so much for sharing friend! Can't wait to try it!
