Simple & Delicious: Blueberry, Feta & Honey Toast


Around late June in Zagreb is when blueberries start appearing in our markets. There are the sweet, bigger blueberries we all know, but there’s also a wild variety here that are much smaller and tart. I love them all! But for these toasts that I often make as a snack for Cam and I during blueberry season, I use the sweet variety.


This couldn’t be easier to put together. Just slice your favorite bread, spread on creamy feta (or creamy goat cheese), then fresh blueberries, a good drizzle of local honey and top it with a drizzle of good quality extra virgin olive oil. That’s it! Simple with so much amazing flavor. My husband comments on how good it is every time I make it – which has been almost every day lately!
