Lemon Life Pesce Rosemary

Simple Things: Beach, Flowers & Mahi Mahi

There’s beauty and joy in every day. I really do believe it’s the seemingly simple things that are always present and are some of the most extraordinary gifts in our lives. Here’s three from this week on this side of the world. I’d love to know what are some in your life right now!

This is the beach we found this weekend on an overgrown path, only a bike ride down the road from where we live. I love snorkeling in warm, crystal clear turquoise water with that man.

Our delicious dinner last night. Fresh Mahi Mahi baked in parchment packages with rosemary from our garden, lemon, olive oil & olives. I think the best meals start with fresh ingredients and are cooked simply.

Lemon Rosemary Parchment Package Fishies:

2 Filets of Fish
4 Sprigs of Rosemary
4 Garlic Cloves
EVOO
2 Lemons
Good Olives
Sea Salt
White Wine

Preheat the oven to 400. Place the fresh fish in the middle of a piece of parchment paper. Sprinkle sea salt over the top & squeeze half of a lemon over it. Drizzle white wine & a good drizzle of olive oil {about 2 tablespoons}. Place about 5-6 whole olives on it, as well as 2 sprigs of fresh rosemary and 2 peeled garlic cloves.

Fold up the parchment paper like a package and tuck in the edges to keep all the liquid inside. Bake for about 15 minutes or until the fish easily flakes with a fork.

Serve with your favorite white wine. We drank a New Zealand Sauvignon Blanc with ours. Enjoy!

    If I were you, I'd never eat anything on that table. Not because it doesn't look tasty, but because everything looks so pretty! I wouldn't want to ruin it! Maybe PotBarn should hire you to style their table shoots. Just sayin. 😉

    By the way, does your hubby ever wanna slap you for taking photos of dinner? I'm always telling D, don't touch that yet! I've gotta take a picture of it! Drives him bananas. I think he's gonna trade me in for a blog-less model one of these days. lol

    Just as I get really excited for fall I look at your beautiful pictures and wish for summer again. The light is always perfect in your pictures. The recipe also sounds absolutely delicious, thanks for sharing it!

    The simple but best thing that happened to me this week was movie date with my bf. I needed cheering up and we watched an action movie 🙂

    Yes, I love the little things too. Mother Theresa said there is great joy in simplicity – I agree 🙂 I would say enjoying spending time with family, holding new nieces and tiny cousins, eating homemade meals, and laughing at old photos with the family.

    mmmmm love the simple things:) this week my best friend and her hubby flew out from the east coast where they live, and we got to have dinner with them and their parents in San Diego. Just sitting around having a meal with your favorite people is just about the BEST simple thing there is:)

    Timmy bear says your photos are pretty phenomenal — and I agree! Also I made your homemade pesto this weekend to mix with gnocchi for his birthday dinner and it was delicious!! I used pecorino cheese because the cheese lady said she liked it best for pesto and it was SOOOO good. You would have been so proud of me making homemade bruschetta and an italiano meal 🙂 And tonight we're using leftover pesto for pizza. So maybe you should just come over for dinner. 7:30pm? Awesome. Bring the wine.
