Caprese Formaggio Life Summer Tomatoes

Summer Appetizer: Warm Goat Cheese Caprese

This was our appetizer tonight for my Dad’s birthday and our last family dinner until the next time we’re together. We’re leaving early in the morning for California!! Our move to Monterey is finally here. Happy almost Friday, happy birthday Daddio and happy start to summer.

Warm Goat Cheese Caprese
(serves 4)

3-4 ripe heirloom tomatoes
4 rounds of goat cheese, sliced at about 1/2 inch thick
fresh basil
EVOO
sea salt for taste
1/2 C panko breadcrumbs
2-3 cloves of garlic, minced
balsamic vinegar (optional)

This appetizer only needs a few minutes to make and is best served warm. Heat a pan over medium heat while you slice the goat cheese and tomatoes. Add the garlic to the breadcrumbs and spread them on a plate. Rub EVOO on the top and bottom of the goat cheese rounds and coat well in the breadcrumbs. If you choose plain panko breadcrumbs, add your favorite seasonings like oregano, basil and a bit of sea salt. Pour some EVOO into the pan and fry each goat cheese round on both sides until brown. This takes less than a minute. Begin with a slice of tomato on a plate, add the goat cheese, a piece of basil, and repeat. Drizzle EVOO over the top, as well as balsamic vinegar if you’d like, and a sprinkle of sea salt. Serve and eat immediately with a glass of wine ๐Ÿ™‚
