Watermelon & Mint Summer Spritzer

More gifts this week from our sweet neighbors. This time in the form of three huge organic watermelons! Their constant generosity is inspirational and so appreciated by us. 
This is a simple recipe, and though it looks sweet, it’s actually really light. It’s much more like a sparkling flavored water than a juice and is so refreshing for the summer.
I’ve been bringing it out to our neighbor in the heat of the morning while he’s working and he loves it! Gulps it right down. “Oishi, Amanda-san!!” Delicious. (:

Watermelon & Mint Summer Spritzer

22 oz pure coconut water {look for one without added sugar}
25 oz lemon sparkling water {1 bottle}
2 C pureed fresh watermelon
2 C cubed fresh watermelon
2  24 oz ginger ales {2 cans}
handful of fresh mint for garnish

Stir all of the ingredients in a large pitcher and refrigerate until ready to drink. Add the mint for garnish on top. Serve in fun margarita glasses or mason jars. Enjoy!

    Yum! I eat so much watermelon when I'm pregnant (and just lots of fruit in general) and drink a ton of coconut water so I'll have to make this!

    ooh, this looks good! I don't normally eat watermelon (I have a SERIOUS sweet tooth and it just doesn't cut it for me), but I bet the ginger ale would put this in its place. I might try it out!
